170gof milk chocolate chipsor a mix or any variety
Instructions
Preheat your oven to 170 C
Prepare by lining a flat tray with baking paper
Cream together the butter and both sugars until they appear pale and fluffy, gently add in the eggs one by one followed by vanilla extract.
Beat then scrape down sides and beat again (low to medium speed) if it’s splits while beating don’t panic once you add the flour it will come back
Fold in the flour, cornflour, bicarbonate soda and salt - turning and folding. Add in most of the chocolate chips (save a few for top of cookies). At this stage it should be like a dough like the picture above
Wrap the dough in baking paper and put it in the fridge for 20 mins
Shape the dough into a little bigger than golf ball sized balls
Place on prepared tray evenly spaced apart from each other. Flatten them ever so slightly and press a few remaining chips onto the top of each one.
Bake for 12-15 mins depending on how soft you like your cookies
Leave to cool on wire rack or enjoy while still warm
